This is a simple, easy alternative to fish fingers and kids love them. I make this regularly for my son, served with mashed veg.
Serve is per person
1 large flathead tail, divided, or 2 smaller tails.
Slide the skewers up the length of the fish fillet, and roll in breadcrumbs. Heat the olive oil over a medium heat, and pan fry the fish on both sides for about 3 minutes each side. Squeeze with lemon juice and serve with mashed veg.
