Eggs Fried in Goose Fat

Another of Terry Durack’s suggestions for goose fat and I love him for it.  It’s a fantastic hangover breakfast.

2 of the best possible, freshest organic eggs you can find

2 teaspoons goose fat

a slice of really good bread toasted

Heat the goose fat in a nonstick frypan until quite hot and crack in the eggs. Immediately reduce the heat to medium, so the eggs don’t burn, and cover the frypan with a lid so the tops of the eggs cook without you having to flip them and risk breaking the yolk.

Cook for just a few minutes so the yolks are nice and runny and serve on thick toast with chilli sauce and a large pot of tea.   Hangover sorted.
